Budgets After Vacation

Last week, I went on vacation! It was an amazing 9 day trip back home with my family that allowed me to come back home well rested, with a lovely tan, and ready to make magic again. I also was gifted with a paycheck with a big fat ZERO on it from not working at all for a week (and I am paid weekly). Thankfully I am pretty good with my money and had my expenses saved up for the week I returned, knowing I was not going to have a check. That does not mean that I did not go into saver mode and made sure I held a food budget this week.

This is all I purchased at Publix to be 2 weeks worth of food and stayed under $50. (I did have sauces, some lunch meats, and veggies from Ma’s garden that I returned with from the vacation).

  • Rotisserie Chicken – I shredded the rotisserie chicken and put it in a container in the fridge, I’ve been reheating as needed
  • Black beans
  • Rotel
  • Sliced Cheeses (cracker barrel cheese was buy one get one, SCORE)
  • Bread (I like the Dave’s Seed Bread- I got into this when I was eating Keto and makes great avocado toast)
  • Spinach
  • Avocados (they were ridiculous this week! $2 for 1!)
  • Brocoli
  • Onion
  • Romaine Lettuce
  • Blue Cheese
  • Eggs
  • Blue Cheese Dressing

What I’ve been making:

  1. Buffalo Chicken Lettuce cups-
  • Rotisserie chicken with buffalo sauce (heated up on the stove with olive oil)
  • Blue cheese or cheddar
  • Romaine leaves
  • blue cheese dressing
  • avocado slices

2. Buffalo Chicken Salad- (I decided the lettuce cups weren’t enough veggies)

  • Rotisserie chicken with buffalo sauce (heated up on the stove with olive oil)
  • Blue cheese or cheddar
  • Romaine leaves
  • spinach
  • blue cheese dressing
  • avocado slices
  • onion
  • carrots
  • tomato
  • cucumber

3. Avocado Toast with Fried Egg (just as it sounds!)

  • Dave’s Seed Bread (one slice usually)
  • Avocado half (or less, I’ve been rationing my avocados since they’re so expensive!)
  • Fried Egg (or 2!)
  • Everything But the Bagel Seasoning (Trader Joe’s for the win)
  • Sriracha
  • (sometimes I’ll add ham or cheese OR both)

4. Dirty Rice

  • Zatarain’s dirty rice
  • Sausage (roomie donation)
  • Fried egg
  • Sriracha (always goes good with a fried egg)

5. Steamed Broccoli, BBQ chicken, rice

  • broccoli
  • rotisserie chicken
  • onion
  • BBQ sauce
  • wild rice (purchased large bag and stored)

6. Vegetarian black bean and Rotel Tacos

  • black beans drained
  • garlic
  • rotel drained
  • onion
  • corn tortillas
  • cheddar cheese
  • salsa
  • sour cream (whatever your fave taco toppings are)

Believe it or not all this food fit on my shelf in the fridge! And full disclosure, I did over spend a tad, because there was a sale on rotes and the black bean tacos are one of my favorite things to make. **pro tip, purchase things you know you’ll eat in bulk when they’re on sale! 🙂 Happy Eating!
